Tell the difference? Just some brown liquid in different glass cups. What am I doing in a barista class? Well, I do love coffee. Ubering to Starbucks during lunch...yes, Kelsey and I can’t get enough of those little outings...Americanos. A difference in aroma? Odorants stimulating my olfactory bulb. They will surely all smell the same: Starbucks, Keurig, instant coffee, all of them, just the smell of coffee, so pungent. Wait, something different, like earth. Hiking around Lake Tahoe this summer, that dust always makes my teeth muddy, but no, something else...opening a can of organic cashews from Costco, sweet but creamy, nutty, hmmm sounds so nice. Slightly bitter. A civet’s digestive enzymes can get rid of this quality, but pooped out coffee? 500 dollars per pound! Such psychological manipulation. Our subconscious tendency to think expensive means better. Or is it social proof? Is this even coffee? No, this one is so different. Sour, lemony; I should bake some lemon bars. I can’t remember the last time. Wait, toast, burnt sugar. A maillard reaction: interactions of proteins and sugars creating unique flavors. Chemistry class with Dr. deLancey...that worksheet is due Monday. Ahhhh, another puff of coffee aroma filling my nose. Like pushing open the doors to a coffee house.
